Why Does My Coffee Taste Bitter? Common Causes & Fixes

Few things are more disappointing than taking that first morning sip and realizing your coffee tastes… bitter. While a hint of bitterness is natural—especially in darker roasts—overpowering bitterness can ruin your cup.

Here’s why it happens and, more importantly, how to fix it.


1. Over-Extraction

The Cause:
When hot water stays in contact with the coffee grounds for too long, it extracts too many compounds, including the bitter ones. This often happens with too-fine grinds or overly long brew times.

The Fix:

  • Adjust your grind size to match your brew method.
  • Shorten your brewing time if using a French press, pour-over, or drip machine.

2. Water That’s Too Hot

The Cause:
Brewing coffee with boiling water (above 205°F / 96°C) can scorch the grounds, leading to a harsh, burnt taste.

The Fix:

  • Let freshly boiled water sit for 30 seconds before pouring.
  • Aim for a brewing temperature between 195°F and 205°F (90–96°C).

3. Poor-Quality or Over-Roasted Beans

The Cause:
Beans that are old, low-quality, or roasted too dark often carry a more bitter profile. Dark roasts have bolder flavors, but when overdone, they can taste burnt.

The Fix:

  • Buy from a reputable roaster.
  • Choose a roast level that suits your taste—medium roasts often balance sweetness and acidity better.

4. Dirty Equipment

The Cause:
Old coffee oils and residue can turn rancid, adding an unpleasant bitterness to fresh brews.

The Fix:

  • Clean your coffee maker regularly.
  • Don’t forget to descale your machine every 1–3 months, depending on water hardness.

5. Too Much Coffee

The Cause:
Using too much coffee for the amount of water can create an overly concentrated, bitter drink.

The Fix:

  • Use a proper coffee-to-water ratio—start with 1 to 2 tablespoons of coffee for every 6 ounces of water, and adjust to taste.
